- White fish fillets (cod or haddock) - 200 grams
- Shrimp (peeled and deveined) - 150 grams
- Mussels (cleaned) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 3 cloves
- Shallots (finely chopped) - 2
- Cherry tomatoes (halved) - 150 grams
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- White wine (dry) - 100 ml
- Fish stock - 200 ml
Steps
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent.
- Add the white fish fillets to the skillet, cooking for about 3-4 minutes on each side until they are golden and cooked through. Remove the fish and set aside.
- In the same skillet, add the shrimp and mussels, cooking until the shrimp turns pink and the mussels open, about 5 minutes.
- Stir in the halved cherry tomatoes, white wine, and fish stock. Simmer for 5 minutes until the sauce slightly reduces.
- Return the cooked fish to the skillet, gently mixing everything together. Squeeze lemon juice over the top and season with salt and black pepper to taste.
- Sprinkle with chopped fresh parsley before serving.
