  • Shallot (finely chopped) - 1 medium
  • Diced tomatoes (canned) - 400 grams
  • Vegetable broth - 250 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon (for garnish) - 1

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until fragrant and translucent, about 3 minutes.
  2. Stir in the diced tomatoes and cook for another 5 minutes, allowing the flavors to meld.
  3. Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Bring the mixture to a simmer.
  4. Add the white fish fillets to the pot first, cooking for about 5 minutes until they start to flake.
  5. Next, add the shrimp, mussels, and clams to the pot. Cover and cook for an additional 5-7 minutes, or until the shellfish have opened and the shrimp are pink.
  6. Once cooked, stir in the chopped parsley and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh lemon wedges and additional parsley if desired.
