Steps
- In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallot, and sauté until fragrant and translucent, about 3 minutes.
- Stir in the diced tomatoes and cook for another 5 minutes, allowing the flavors to meld.
- Pour in the vegetable broth and add the dried thyme, salt, and black pepper. Bring the mixture to a simmer.
- Add the white fish fillets to the pot first, cooking for about 5 minutes until they start to flake.
- Next, add the shrimp, mussels, and clams to the pot. Cover and cook for an additional 5-7 minutes, or until the shellfish have opened and the shrimp are pink.
- Once cooked, stir in the chopped parsley and adjust seasoning if necessary.
- Serve hot, garnished with fresh lemon wedges and additional parsley if desired.
