- 2 ripe peaches
- 250 ml water
- 2 tablespoons honey
- 1 teaspoon vanilla extract
- 100 grams fresh raspberries
- 1 teaspoon lemon juice
- 150 grams Greek yogurt
- 1 tablespoon sliced almonds (for garnish)
Steps
- In a medium saucepan, bring 250 ml of water, honey, and vanilla extract to a gentle simmer.
- Carefully add the peaches, cut in half and pitted, to the simmering water and poach for about 5-7 minutes until tender.
- Remove the peaches from the water and let them cool slightly, then peel off the skin.
- In a blender, combine the fresh raspberries and lemon juice, and blend until smooth. Strain the mixture through a fine sieve to remove seeds.
- To serve, place one peach half in each bowl, add a generous scoop of Greek yogurt on top, and drizzle with raspberry sauce.
- Garnish with sliced almonds and serve immediately.
