Ingredients

  • 2 ripe peaches
  • 250 ml water
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 100 grams fresh raspberries
  • 1 teaspoon lemon juice
  • 150 grams Greek yogurt
  • 1 tablespoon sliced almonds (for garnish)

Steps

  1. In a medium saucepan, bring 250 ml of water, honey, and vanilla extract to a gentle simmer.
  2. Carefully add the peaches, cut in half and pitted, to the simmering water and poach for about 5-7 minutes until tender.
  3. Remove the peaches from the water and let them cool slightly, then peel off the skin.
  4. In a blender, combine the fresh raspberries and lemon juice, and blend until smooth. Strain the mixture through a fine sieve to remove seeds.
  5. To serve, place one peach half in each bowl, add a generous scoop of Greek yogurt on top, and drizzle with raspberry sauce.
  6. Garnish with sliced almonds and serve immediately.
