Ingredients

  • 2 ripe peaches
  • 1 cup unsweetened almond milk
  • 1/4 cup raw honey
  • 1/2 cup fresh raspberries
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Steps

  1. Bring a pot of water to a boil. Carefully score an 'X' on the bottom of each peach and blanch them in the boiling water for about 30 seconds. Remove and place the peaches in ice water to cool. Once cooled, peel the skins off and set aside.
  2. In a saucepan, combine the raspberries, lemon juice, and half of the honey. Cook over medium heat until the raspberries break down and form a sauce, about 5-7 minutes. Remove from heat and strain to remove seeds, if desired.
  3. In a bowl, whisk together the almond milk, remaining honey, vanilla extract, and a pinch of salt. Pour this mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 15-20 minutes). If no ice cream maker is available, pour into a shallow dish and freeze, stirring every 30 minutes until it reaches desired consistency.
  4. To serve, place a poached peach on each plate. Top with a scoop of almond milk ice cream and drizzle with raspberry sauce. Enjoy immediately.
