- Olive oil - 2 tablespoons (30ml)
- Butter - 1 tablespoon (14g)
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Stevia or erythritol - 1 teaspoon (optional, for extra sweetness)
Steps
- Peel and slice the onions thinly into half-moon shapes.
- In a large skillet, heat the olive oil and butter over medium heat until melted.
- Add the sliced onions to the skillet, stirring to coat them in the oil and butter.
- Sprinkle the salt and black pepper over the onions and reduce the heat to low.
- Cook the onions slowly, stirring occasionally, for about 25-30 minutes until they are golden brown and caramelized.
- If desired, add the chopped fresh thyme and sweetener during the last 5 minutes of cooking, stirring to combine.
- Remove from heat and serve warm as a side dish.
