- Eggs - 4 large
- Heavy cream - 100 ml
- Spinach - 50 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 40 grams, grated
- Butter - 20 grams
- Salt - to taste
- Black pepper - to taste
- Fresh herbs (chives or parsley) - for garnish
Steps
- Preheat your oven to 180°C (350°F).
- In a small skillet, melt the butter over medium heat and sauté the fresh spinach until wilted, about 2-3 minutes. Season with salt and pepper.
- In two ramekins, evenly distribute the sautéed spinach and cherry tomato halves.
- Crack two eggs into each ramekin over the vegetables.
- Pour 50 ml of heavy cream into each ramekin, being careful not to disturb the eggs.
- Sprinkle grated Parmesan cheese over the top of each ramekin.
- Place the ramekins in a baking dish and fill the dish with hot water so that it reaches halfway up the sides of the ramekins.
- Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks remain slightly runny.
- Remove from the oven, garnish with fresh herbs, and serve immediately.
