Ingredients

  • Eggs - 4 large
  • Heavy cream - 100 ml
  • Spinach - 50 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 40 grams, grated
  • Butter - 20 grams
  • Salt - to taste
  • Black pepper - to taste
  • Fresh herbs (chives or parsley) - for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a small skillet, melt the butter over medium heat and sauté the fresh spinach until wilted, about 2-3 minutes. Season with salt and pepper.
  3. In two ramekins, evenly distribute the sautéed spinach and cherry tomato halves.
  4. Crack two eggs into each ramekin over the vegetables.
  5. Pour 50 ml of heavy cream into each ramekin, being careful not to disturb the eggs.
  6. Sprinkle grated Parmesan cheese over the top of each ramekin.
  7. Place the ramekins in a baking dish and fill the dish with hot water so that it reaches halfway up the sides of the ramekins.
  8. Bake in the preheated oven for 15-20 minutes, or until the egg whites are set but the yolks remain slightly runny.
  9. Remove from the oven, garnish with fresh herbs, and serve immediately.
