  • Avocado - 1 ripe

  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh chives - 1 tablespoon, chopped

Steps

  1. Toast the whole grain bread slices until golden brown.
  2. In a medium saucepan, bring water to a gentle simmer and add a pinch of salt.
  3. Crack each egg into a small bowl, then gently slide them into the simmering water, poaching for about 3-4 minutes until the whites are set and yolks are still runny.
  4. While the eggs are poaching, prepare the avocado hollandaise by blending the ripe avocado, lemon juice, Greek yogurt, olive oil, salt, and black pepper in a food processor until smooth.
  5. Once the eggs are done, use a slotted spoon to remove them from the water and drain excess water.
