Steps
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Add the spinach and cherry tomatoes to the skillet, season with salt and pepper, and cook for about 3-4 minutes until the spinach is wilted and tomatoes are softened.
- Remove the sautéed vegetables from the skillet and set aside, keeping them warm.
- In the same skillet, add the remaining tablespoon of olive oil and crack the eggs into the pan.
- Cook the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny.
- To serve, place the sautéed spinach and tomatoes on plates, top with the fried eggs, and garnish with chopped parsley.
