Ingredients

  • Eggs - 4 large

  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  2. Add minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the spinach and cherry tomatoes to the skillet, season with salt and pepper, and cook for about 3-4 minutes until the spinach is wilted and tomatoes are softened.
  4. Remove the sautéed vegetables from the skillet and set aside, keeping them warm.
  5. In the same skillet, add the remaining tablespoon of olive oil and crack the eggs into the pan.
  6. Cook the eggs for about 3-4 minutes, or until the whites are set and the yolks are still runny.
  7. To serve, place the sautéed spinach and tomatoes on plates, top with the fried eggs, and garnish with chopped parsley.
