Steps
- In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté for about 5 minutes until the onion is translucent.
- Add the minced garlic and cook for another minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes to the pot. Brown the meat on all sides for about 5-7 minutes.
- Stir in the tomato paste and continue cooking for 2 minutes, ensuring the lamb is well-coated.
- Add the sliced carrots, diced turnips, and cubed potatoes to the pot, mixing everything together.
- Pour in the vegetable broth, then add the thyme, bay leaf, salt, and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the lamb is tender and the vegetables are cooked through.
- Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
