  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 500 ml
  • Dried thyme - 1 teaspoon
  • Bay leaf - 1
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat and add the chopped onion. Sauté for about 5 minutes until the onion is translucent.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Increase the heat to medium-high and add the lamb cubes to the pot. Brown the meat on all sides for about 5-7 minutes.
  4. Stir in the tomato paste and continue cooking for 2 minutes, ensuring the lamb is well-coated.
  5. Add the sliced carrots, diced turnips, and cubed potatoes to the pot, mixing everything together.
  6. Pour in the vegetable broth, then add the thyme, bay leaf, salt, and black pepper. Bring to a boil.
  7. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the lamb is tender and the vegetables are cooked through.
  8. Remove the bay leaf, adjust seasoning if necessary, and serve hot, garnished with fresh parsley.
