Ingredients

  • Portobello mushrooms - 200 grams
  • Cremini mushrooms - 100 grams
  • Red bell pepper - 1 medium
  • Zucchini - 1 medium
  • Red onion - 1 medium
  • Fresh thyme - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Red wine - 100 ml
  • Vegetable broth - 50 ml
  • Olive oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Skewers - 4-6 (soaked in water if wooden)

Steps

  1. Clean the mushrooms and chop the Portobello mushrooms into large chunks. Halve the Cremini mushrooms.
  2. Chop the red bell pepper, zucchini, and red onion into bite-sized pieces.
  3. In a bowl, combine the olive oil, minced garlic, red wine, vegetable broth, soy sauce, fresh thyme, salt, and black pepper. Mix well to create a marinade.
  4. Add the chopped mushrooms and vegetables to the marinade, tossing to coat evenly. Allow to marinate for at least 15 minutes.
  5. Preheat the grill to medium-high heat.
  6. Thread the marinated mushrooms and vegetables onto the skewers, alternating between different types.
  7. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and lightly charred.
  8. Remove from the grill and serve warm, drizzling any remaining marinade over the skewers.
