- Portobello mushrooms - 200 grams
- Cremini mushrooms - 100 grams
- Red bell pepper - 1 medium
- Zucchini - 1 medium
- Red onion - 1 medium
- Fresh thyme - 1 teaspoon
- Garlic - 2 cloves, minced
- Red wine - 100 ml
- Vegetable broth - 50 ml
- Olive oil - 2 tablespoons
- Soy sauce - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Skewers - 4-6 (soaked in water if wooden)
Steps
- Clean the mushrooms and chop the Portobello mushrooms into large chunks. Halve the Cremini mushrooms.
- Chop the red bell pepper, zucchini, and red onion into bite-sized pieces.
- In a bowl, combine the olive oil, minced garlic, red wine, vegetable broth, soy sauce, fresh thyme, salt, and black pepper. Mix well to create a marinade.
- Add the chopped mushrooms and vegetables to the marinade, tossing to coat evenly. Allow to marinate for at least 15 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated mushrooms and vegetables onto the skewers, alternating between different types.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and lightly charred.
- Remove from the grill and serve warm, drizzling any remaining marinade over the skewers.
