Ingredients

  • Mushrooms (cremini or button) - 300 grams, sliced
  • Carrots - 1 medium, sliced
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Vegetable broth - 250 ml
  • Dry red wine - 150 ml
  • Soy sauce - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Olive oil - 2 tablespoons
  • Thyme (fresh or dried) - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Cornstarch - 1 tablespoon (optional, for thickening)
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until translucent.
  2. Add the minced garlic and sliced carrots to the skillet, cooking for an additional 3-4 minutes until the carrots begin to soften.
  3. Stir in the sliced mushrooms and cook for about 7-10 minutes until they are browned and have released their moisture.
  4. Pour in the red wine and allow it to simmer for 5 minutes, letting the alcohol evaporate slightly.
  5. Add the vegetable broth, soy sauce, tomato paste, thyme, bay leaf, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.
  7. If a thicker sauce is desired, mix the cornstarch with a little water to create a slurry, then stir it into the skillet and cook for an additional 2-3 minutes until the sauce thickens.
  8. Remove the bay leaf before serving, and garnish with fresh parsley.
