- Tomato paste - 1 tablespoon

- Thyme (fresh or dried) - 1 teaspoon
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Cornstarch - 1 tablespoon (optional, for thickening)
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for about 5 minutes until translucent.
- Add the minced garlic and sliced carrots to the skillet, cooking for an additional 3-4 minutes until the carrots begin to soften.
- Stir in the sliced mushrooms and cook for about 7-10 minutes until they are browned and have released their moisture.
- Pour in the red wine and allow it to simmer for 5 minutes, letting the alcohol evaporate slightly.
- Add the vegetable broth, soy sauce, tomato paste, thyme, bay leaf, salt, and black pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld.
- If a thicker sauce is desired, mix the cornstarch with a little water to create a slurry, then stir it into the skillet and cook for an additional 2-3 minutes until the sauce thickens.
- Remove the bay leaf before serving, and garnish with fresh parsley.
