Ingredients

  • Zucchini - 2 medium, spiralized
  • Olive oil - 2 tablespoons
  • Shallot - 1, finely chopped
  • Garlic - 2 cloves, minced
  • Mixed mushrooms (cremini, shiitake) - 200 grams, sliced
  • Heavy cream - 100 milliliters
  • Truffle oil - 1 teaspoon
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 1 tablespoon, chopped

Steps

  1. Heat olive oil in a large skillet over medium heat. Add the chopped shallot and sauté for 2-3 minutes until translucent.
  2. Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes until the mushrooms are tender and browned.
  3. Pour in the heavy cream and stir well to combine. Allow the mixture to simmer for 5 minutes until slightly thickened.
  4. Stir in the truffle oil, grated Parmesan cheese, salt, and black pepper. Mix well and cook for another 2 minutes.
  5. In a separate pot, bring water to a boil and add salt. Blanch the spiralized zucchini for 2-3 minutes until just tender. Drain and set aside.
  6. Add the blanched zucchini to the mushroom sauce in the skillet. Toss gently to coat the zucchini in the creamy sauce.
  7. Serve immediately, garnished with chopped fresh parsley and additional Parmesan if desired.
