- Zucchini - 2 medium, spiralized
- Olive oil - 2 tablespoons
- Shallot - 1, finely chopped
- Garlic - 2 cloves, minced
- Mixed mushrooms (cremini, shiitake) - 200 grams, sliced
- Heavy cream - 100 milliliters
- Truffle oil - 1 teaspoon
- Parmesan cheese - 30 grams, grated
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 1 tablespoon, chopped
Steps
- Heat olive oil in a large skillet over medium heat. Add the chopped shallot and sauté for 2-3 minutes until translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for about 5-7 minutes until the mushrooms are tender and browned.
- Pour in the heavy cream and stir well to combine. Allow the mixture to simmer for 5 minutes until slightly thickened.
- Stir in the truffle oil, grated Parmesan cheese, salt, and black pepper. Mix well and cook for another 2 minutes.
- In a separate pot, bring water to a boil and add salt. Blanch the spiralized zucchini for 2-3 minutes until just tender. Drain and set aside.
- Add the blanched zucchini to the mushroom sauce in the skillet. Toss gently to coat the zucchini in the creamy sauce.
- Serve immediately, garnished with chopped fresh parsley and additional Parmesan if desired.
