  • Vegetable oil - 30 ml
  • Vanilla extract - 5 ml
  • Mixed seasonal fruits (e.g., blueberries, raspberries, chopped apples) - 150 grams

Steps

  1. Preheat the oven to 180°C (350°F) and line a muffin tin with paper liners.
  2. In a large bowl, mix the whole wheat flour, baking powder, baking soda, and salt together.
  3. In another bowl, whisk together the maple syrup, almond milk, vegetable oil, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined; do not overmix.
  5. Fold in the mixed seasonal fruits carefully to avoid breaking them.
  6. Spoon the batter evenly into the prepared muffin tin, filling each cup about 2/3 full.
