Steps

  1. In a saucepan, bring water to a boil and add the fresh green peas. Cook for about 3-4 minutes until tender, then drain and cool them in ice water to retain their color.
  2. In a blender or food processor, combine the cooled peas, cream cheese, minced garlic, fresh mint, lemon juice, salt, and black pepper. Blend until smooth and creamy.
  3. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the pea mixture until fully combined.
  4. Spoon the mousse into serving glasses or bowls, smoothing the top. Chill in the refrigerator for at least 20 minutes to set.
