Ingredients
- Chicken liver - 200 grams, cleaned
- Unsalted kosher butter - 50 grams
- Shallot - 1 medium, finely chopped
- Garlic - 1 clove, minced
- Brandy - 30 ml
- Fresh thyme - 1 teaspoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Heavy cream - 100 ml
- Fresh parsley - for garnish
Steps
- In a skillet, melt 25 grams of butter over medium heat. Add the chopped shallot and minced garlic, sautéing until softened, about 2-3 minutes.
- Add the cleaned chicken liver to the skillet, cooking for about 5-7 minutes until browned on the outside but still slightly pink in the center.
- Pour in the brandy and allow it to cook for another 2 minutes, stirring frequently. Season with thyme, salt, and black pepper.
- Remove the skillet from heat and let it cool slightly. Transfer the liver mixture to a food processor and blend until smooth.
- Add the remaining butter (25 grams) and heavy cream to the food processor, blending until fully incorporated and creamy.
- Taste and adjust seasoning if necessary. Spoon the mousse into serving dishes or ramekins and refrigerate for at least 30 minutes to set.
- Before serving, garnish with fresh parsley and serve with crusty bread or crackers.
