Ingredients

  • Chicken liver - 200 grams, cleaned
  • Unsalted kosher butter - 50 grams
  • Shallot - 1 medium, finely chopped
  • Garlic - 1 clove, minced
  • Brandy - 30 ml
  • Fresh thyme - 1 teaspoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Heavy cream - 100 ml
  • Fresh parsley - for garnish

Steps

  1. In a skillet, melt 25 grams of butter over medium heat. Add the chopped shallot and minced garlic, sautéing until softened, about 2-3 minutes.
  2. Add the cleaned chicken liver to the skillet, cooking for about 5-7 minutes until browned on the outside but still slightly pink in the center.
  3. Pour in the brandy and allow it to cook for another 2 minutes, stirring frequently. Season with thyme, salt, and black pepper.
  4. Remove the skillet from heat and let it cool slightly. Transfer the liver mixture to a food processor and blend until smooth.
  5. Add the remaining butter (25 grams) and heavy cream to the food processor, blending until fully incorporated and creamy.
  6. Taste and adjust seasoning if necessary. Spoon the mousse into serving dishes or ramekins and refrigerate for at least 30 minutes to set.
  7. Before serving, garnish with fresh parsley and serve with crusty bread or crackers.
