Steps
- Peel and chop the carrots into small pieces.
- In a pot of boiling salted water, cook the carrots for about 15 minutes or until tender.
- Drain the carrots and let them cool slightly.
- In a blender, combine the cooked carrots, Greek yogurt, cream cheese, olive oil, minced garlic, salt, black pepper, and lemon juice.
- Blend until smooth and creamy, scraping down the sides as needed.
