Ingredients

  • Carrots - 300 grams
  • Greek yogurt - 100 grams
  • Cream cheese - 50 grams
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh chives - 1 tablespoon, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Peel and chop the carrots into small pieces.
  2. In a pot of boiling salted water, cook the carrots for about 15 minutes or until tender.
  3. Drain the carrots and let them cool slightly.
  4. In a blender, combine the cooked carrots, Greek yogurt, cream cheese, olive oil, minced garlic, salt, black pepper, and lemon juice.
  5. Blend until smooth and creamy, scraping down the sides as needed.
  6. Taste and adjust seasoning if necessary.
  7. Transfer the mousse to serving bowls or glasses, and chill in the refrigerator for at least 10 minutes.
