- Duck liver - 200 grams
- Shallots - 1 medium, finely chopped
- Unsalted butter - 50 grams
- Heavy cream - 100 milliliters
- Cognac - 30 milliliters
- Thyme - 1 teaspoon, fresh or 1/2 teaspoon dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Nutmeg - a pinch
Steps
- In a skillet over medium heat, melt 25 grams of butter and add the finely chopped shallots. Sauté until translucent and fragrant, about 3-4 minutes.
- Add the duck liver to the skillet, cooking for about 5 minutes until browned outside but slightly pink inside. Stir in the cognac and allow it to cook off for about 2 minutes.
- Remove the skillet from the heat, and transfer the liver mixture to a food processor. Add the remaining butter, thyme, salt, black pepper, and nutmeg.
- Blend until smooth, then gradually add the heavy cream, blending until fully incorporated and the mixture is airy and light.
- Pass the mousse through a fine sieve into a bowl to ensure a silky texture, using a spatula to press it through.
- Spoon the mousse into serving dishes or ramekins, smoothing the tops. Cover with plastic wrap and refrigerate for at least 2 hours to set.
- Once set, serve chilled with crackers or toasted baguette slices.
