Ingredients

  • Duck liver - 200 grams
  • Shallots - 1 medium, finely chopped
  • Unsalted butter - 50 grams
  • Heavy cream - 100 milliliters
  • Cognac - 30 milliliters
  • Thyme - 1 teaspoon, fresh or 1/2 teaspoon dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Nutmeg - a pinch

Steps

  1. In a skillet over medium heat, melt 25 grams of butter and add the finely chopped shallots. Sauté until translucent and fragrant, about 3-4 minutes.
  2. Add the duck liver to the skillet, cooking for about 5 minutes until browned outside but slightly pink inside. Stir in the cognac and allow it to cook off for about 2 minutes.
  3. Remove the skillet from the heat, and transfer the liver mixture to a food processor. Add the remaining butter, thyme, salt, black pepper, and nutmeg.
  4. Blend until smooth, then gradually add the heavy cream, blending until fully incorporated and the mixture is airy and light.
  5. Pass the mousse through a fine sieve into a bowl to ensure a silky texture, using a spatula to press it through.
  6. Spoon the mousse into serving dishes or ramekins, smoothing the tops. Cover with plastic wrap and refrigerate for at least 2 hours to set.
  7. Once set, serve chilled with crackers or toasted baguette slices.
