Ingredients

  • Silken tofu - 200 grams
  • Dark chocolate (vegan) - 100 grams
  • Maple syrup - 3 tablespoons
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 1 tablespoon
  • Sea salt - a pinch

Steps

  1. Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 30-second intervals until smooth.
  2. While the chocolate is melting, drain the silken tofu and add it to a blender or food processor.
  3. Add the melted chocolate, maple syrup, vanilla extract, cocoa powder, and a pinch of sea salt to the blender with the tofu.
  4. Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed.
  5. Taste the mousse and adjust sweetness, if desired, by adding more maple syrup.
  6. Transfer the mousse into two serving glasses or bowls and refrigerate for at least 1 hour to set.
  7. Serve chilled, garnished with fresh berries or a sprinkle of cocoa powder if desired.
