Steps
- Melt the dark chocolate in a heatproof bowl over simmering water or in the microwave in 30-second intervals until smooth.
- While the chocolate is melting, drain the silken tofu and add it to a blender or food processor.
- Add the melted chocolate, maple syrup, vanilla extract, cocoa powder, and a pinch of sea salt to the blender with the tofu.
- Blend on high until the mixture is completely smooth and creamy, scraping down the sides as needed.
- Taste the mousse and adjust sweetness, if desired, by adding more maple syrup.
- Transfer the mousse into two serving glasses or bowls and refrigerate for at least 1 hour to set.
- Serve chilled, garnished with fresh berries or a sprinkle of cocoa powder if desired.
