Ingredients

  • Eggplant - 200 grams
  • Zucchini - 150 grams
  • Potato - 150 grams
  • Tomato - 200 grams
  • Onion - 1 medium
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Fresh basil - 5 leaves
  • Salt - to taste
  • Black pepper - to taste
  • Milk - 200 ml
  • Butter - 20 grams
  • All-purpose flour - 20 grams
  • Grated cheese (Gruyère or Parmesan) - 50 grams

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant, zucchini, and potato into thin rounds. Sprinkle with salt and let them sit for 15 minutes to draw out moisture.
  3. Rinse the vegetables and pat them dry with a paper towel.
  4. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chopped onion and minced garlic, sauté until softened.
  5. Add diced tomatoes, oregano, salt, and pepper to the skillet. Cook for about 10 minutes until the sauce thickens. Stir in chopped basil and set aside.
  6. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until lightly golden.
  7. Gradually whisk in the milk, stirring continuously until the sauce thickens. Season with salt and pepper, then remove from heat.
  8. In a baking dish, layer half of the potatoes, followed by half of the zucchini, and half of the eggplant. Spread half of the tomato sauce over the vegetables.
  9. Repeat the layering with the remaining vegetables and sauce. Pour the béchamel sauce on top and sprinkle with grated cheese.
  10. Bake in the preheated oven for 30-35 minutes until golden and bubbly. Let it cool for a few minutes before serving.
