  • Thyme - 1 teaspoon, fresh or dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for zest and juice

Steps

  1. Clean the king oyster mushrooms and slice them into thick rounds.
  2. In a large pot, heat the olive oil over medium heat. Add the shallots and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Increase the heat to medium-high and add the sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until they begin to soften.
  5. Pour in the dry white wine and allow it to simmer for about 3 minutes, letting the alcohol evaporate.
  6. Add the vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a gentle boil, then reduce heat and let simmer for 10 minutes.
  7. Stir in the chopped parsley and a squeeze of lemon juice just before serving. Remove the bay leaf.
  8. Serve the mushroom mixture in bowls with lemon zest sprinkled on top. Enjoy with crusty bread to soak up the broth.
