- Vegetable broth - 200 ml

- Thyme - 1 teaspoon, fresh or dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, for zest and juice
Steps
- Clean the king oyster mushrooms and slice them into thick rounds.
- In a large pot, heat the olive oil over medium heat. Add the shallots and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Increase the heat to medium-high and add the sliced mushrooms. Cook for about 5 minutes, stirring occasionally, until they begin to soften.
- Pour in the dry white wine and allow it to simmer for about 3 minutes, letting the alcohol evaporate.
- Add the vegetable broth, thyme, bay leaf, salt, and black pepper. Bring to a gentle boil, then reduce heat and let simmer for 10 minutes.
- Stir in the chopped parsley and a squeeze of lemon juice just before serving. Remove the bay leaf.
- Serve the mushroom mixture in bowls with lemon zest sprinkled on top. Enjoy with crusty bread to soak up the broth.
