Steps
- Heat the olive oil in a large pot over medium heat. Add the shallots and garlic, and sauté until softened, about 2-3 minutes.
- Add the diced zucchini and sliced mushrooms to the pot, and cook for another 5-7 minutes until they begin to soften.
- Pour in the white wine and vegetable broth, then add the thyme and bay leaf. Bring the mixture to a gentle simmer.
- Add the halved cherry tomatoes and season with salt and black pepper. Simmer for an additional 10-15 minutes, allowing the flavors to meld.
- Remove the bay leaf and stir in the chopped parsley just before serving.
- Serve hot, garnished with lemon wedges on the side.
