  • White wine - 150 ml
  • Vegetable broth - 200 ml
  • Thyme - 1 teaspoon, fresh or dried
  • Bay leaf - 1
  • Parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the shallots and garlic, and sauté until softened, about 2-3 minutes.
  2. Add the diced zucchini and sliced mushrooms to the pot, and cook for another 5-7 minutes until they begin to soften.
  3. Pour in the white wine and vegetable broth, then add the thyme and bay leaf. Bring the mixture to a gentle simmer.
  4. Add the halved cherry tomatoes and season with salt and black pepper. Simmer for an additional 10-15 minutes, allowing the flavors to meld.
  5. Remove the bay leaf and stir in the chopped parsley just before serving.
  6. Serve hot, garnished with lemon wedges on the side.
