Ingredients

  • Burger Buns - 2 units
  • Fresh Mussels - 250 grams (cleaned and debearded)
  • Potatoes - 300 grams (for fries)
  • Olive Oil - 2 tablespoons
  • Garlic - 2 cloves (minced)
  • Lemon Juice - 1 tablespoon
  • Fresh Parsley - 2 tablespoons (chopped)
  • Salt - to taste
  • Black Pepper - to taste
  • Paprika - 1 teaspoon
  • Mayonnaise - 3 tablespoons
  • Lettuce Leaves - 2 units

Steps

  1. Preheat the oven to 200°C (390°F) for the fries.
  2. Peel and cut the potatoes into thin fries, then soak them in cold water for 15 minutes to remove excess starch.
  3. Drain and pat the fries dry, then toss them with 1 tablespoon of olive oil, salt, and paprika. Spread them out on a baking sheet.
  4. Bake the fries in the preheated oven for 25-30 minutes, flipping halfway through until golden and crispy.
  5. While the fries are baking, prepare the mussels by placing them in a pot with 1 tablespoon of olive oil, minced garlic, and a splash of water. Cover and steam on medium heat for about 5-7 minutes until the mussels open up.
  6. Remove the mussels from the pot, discarding any that did not open. Stir in lemon juice, chopped parsley, and season with salt and pepper.
  7. In a small bowl, mix mayonnaise with a little more lemon juice, minced garlic, and salt to create the garlic-lemon aioli.
  8. To assemble the burgers, spread the aioli on the bottom half of each bun, add a layer of lettuce, spoon in the mussels, and top with a generous serving of fries.
  9. Cover with the top half of the bun and serve immediately.
