- Burger Buns - 2 units
- Fresh Mussels - 250 grams (cleaned and debearded)
- Potatoes - 300 grams (for fries)
- Olive Oil - 2 tablespoons
- Garlic - 2 cloves (minced)
- Lemon Juice - 1 tablespoon
- Fresh Parsley - 2 tablespoons (chopped)
- Salt - to taste
- Black Pepper - to taste
- Paprika - 1 teaspoon
- Mayonnaise - 3 tablespoons
- Lettuce Leaves - 2 units
Steps
- Preheat the oven to 200°C (390°F) for the fries.
- Peel and cut the potatoes into thin fries, then soak them in cold water for 15 minutes to remove excess starch.
- Drain and pat the fries dry, then toss them with 1 tablespoon of olive oil, salt, and paprika. Spread them out on a baking sheet.
- Bake the fries in the preheated oven for 25-30 minutes, flipping halfway through until golden and crispy.
- While the fries are baking, prepare the mussels by placing them in a pot with 1 tablespoon of olive oil, minced garlic, and a splash of water. Cover and steam on medium heat for about 5-7 minutes until the mussels open up.
- Remove the mussels from the pot, discarding any that did not open. Stir in lemon juice, chopped parsley, and season with salt and pepper.
- In a small bowl, mix mayonnaise with a little more lemon juice, minced garlic, and salt to create the garlic-lemon aioli.
- To assemble the burgers, spread the aioli on the bottom half of each bun, add a layer of lettuce, spoon in the mussels, and top with a generous serving of fries.
- Cover with the top half of the bun and serve immediately.
