- Puff pastry sheets - 200 grams
- Almond milk - 250 ml
- Cornstarch - 30 grams
- Maple syrup - 40 grams
- Vanilla extract - 1 teaspoon
- Coconut cream - 100 grams
- Fresh strawberries - 100 grams
- Blueberries - 50 grams
- Icing sugar - for dusting
Steps
- Preheat the oven to 200°C (400°F).
- Roll out the puff pastry sheets to a thickness of about 3 mm and cut them into rectangles (about 10 cm x 5 cm).
- Place the pastry rectangles on a baking tray lined with parchment paper and prick them with a fork to prevent puffing.
- Bake the puff pastry for 15-20 minutes until golden brown and crispy. Remove from the oven and let cool.
- In a saucepan, combine the almond milk, cornstarch, maple syrup, and vanilla extract. Whisk until smooth and cook over medium heat, stirring constantly until the mixture thickens (about 5-7 minutes).
- Once thickened, remove from heat and let it cool slightly before folding in the coconut cream until well combined.
- To assemble, take one piece of puff pastry, spread a layer of vegan custard on top, and add a layer of sliced strawberries.
- Repeat the layers with another piece of puff pastry and custard, then top with a final piece of pastry.
- Dust the top layer with icing sugar and garnish with blueberries.
- Serve immediately or refrigerate for up to an hour before serving for a chilled dessert.
