- Puff pastry - 200 grams (store-bought, vegan)
- Raw cashews - 100 grams (soaked in water for 4 hours)
- Coconut milk - 100 ml (full-fat)
- Maple syrup - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Lemon juice - 1 tablespoon
- Mixed berries (strawberries, blueberries, raspberries) - 150 grams
- Powdered sugar - for dusting
- Fresh mint leaves - for garnish
Steps
- Preheat the oven to 200°C (392°F).
- Roll out the puff pastry on a floured surface to about 3 mm thickness, then cut into two rectangles (10 cm x 20 cm).
- Place the pastry rectangles on a baking sheet lined with parchment paper and prick with a fork to prevent puffing.
- Bake in the preheated oven for 15-20 minutes or until golden brown and crisp. Remove from oven and let cool.
- In a blender, combine soaked cashews, coconut milk, maple syrup, vanilla extract, and lemon juice. Blend until smooth and creamy, scraping down the sides as needed.
- Once the pastry has cooled, spread a generous layer of the cashew cream on top of one pastry rectangle.
- Layer half of the mixed berries over the cream, then place the second pastry rectangle on top.
- Spread another layer of cashew cream on the second pastry and top with the remaining mixed berries.
- Dust the top with powdered sugar and garnish with fresh mint leaves before serving.
