Ingredients

  • Phyllo dough - 6 sheets
  • Coconut cream - 200 ml
  • Powdered sugar - 2 tablespoons
  • Vanilla extract - 1 teaspoon
  • Fresh strawberries - 100 grams, sliced
  • Kiwi - 1, peeled and sliced
  • Blueberries - 50 grams
  • Mint leaves - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Lay one sheet of phyllo dough on a baking sheet and brush it lightly with melted coconut oil or vegan butter. Repeat with 3 sheets, layering them on top of each other.
  3. Bake the layered phyllo dough in the preheated oven for about 10-12 minutes or until golden brown and crisp. Remove from the oven and let cool.
  4. In a mixing bowl, combine the coconut cream, powdered sugar, and vanilla extract, and whip until smooth and creamy.
  5. Once the phyllo layers have cooled, carefully cut them into rectangles to form the base and top layers of the mille-feuille.
  6. To assemble, place one rectangle of phyllo as the base, spread a layer of coconut cream on top, add a layer of sliced strawberries, and then another rectangle of phyllo.
  7. Repeat the layering process with the remaining ingredients, finishing with a layer of phyllo on top.
  8. Garnish the top layer with coconut cream, fresh blueberries, and mint leaves.
  9. Serve immediately and enjoy this refreshing vegan dessert!
