Ingredients
- Phyllo dough - 6 sheets
- Coconut cream - 200 ml
- Powdered sugar - 2 tablespoons
- Vanilla extract - 1 teaspoon
- Fresh strawberries - 100 grams, sliced
- Kiwi - 1, peeled and sliced
- Blueberries - 50 grams
- Mint leaves - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- Lay one sheet of phyllo dough on a baking sheet and brush it lightly with melted coconut oil or vegan butter. Repeat with 3 sheets, layering them on top of each other.
- Bake the layered phyllo dough in the preheated oven for about 10-12 minutes or until golden brown and crisp. Remove from the oven and let cool.
- In a mixing bowl, combine the coconut cream, powdered sugar, and vanilla extract, and whip until smooth and creamy.
- Once the phyllo layers have cooled, carefully cut them into rectangles to form the base and top layers of the mille-feuille.
- To assemble, place one rectangle of phyllo as the base, spread a layer of coconut cream on top, add a layer of sliced strawberries, and then another rectangle of phyllo.
- Repeat the layering process with the remaining ingredients, finishing with a layer of phyllo on top.
- Garnish the top layer with coconut cream, fresh blueberries, and mint leaves.
