Ingredients

  • Puff pastry - 250 grams
  • Milk - 300 ml
  • Granulated sugar - 60 grams
  • Cornstarch - 30 grams
  • Egg yolks - 2 large
  • Vanilla extract - 1 teaspoon
  • Unsalted butter - 40 grams
  • Icing sugar - for dusting
  • Fresh berries (optional) - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Roll out the puff pastry on a floured surface to about 3 mm thick and cut it into three equal rectangles.
  3. Place the pastry rectangles on a baking sheet lined with parchment paper and prick them with a fork to prevent puffing.
  4. Bake in the preheated oven for 15-20 minutes or until golden brown and crispy. Let them cool on a wire rack.
  5. In a saucepan, heat the milk over medium heat until it starts to steam but not boil.
  6. In a bowl, whisk together the granulated sugar, cornstarch, and egg yolks until smooth.
  7. Gradually pour the hot milk into the egg mixture, whisking continuously to prevent curdling.
  8. Return the mixture to the saucepan and cook over medium heat, stirring constantly until it thickens.
  9. Remove from heat and stir in the vanilla extract and butter until smooth. Allow the pastry cream to cool.
  10. Once the puff pastry is cool, assemble by placing one pastry layer on a plate, spreading a layer of pastry cream on top, and repeating with the second layer. Top with the final pastry layer.
  11. Dust the top layer with icing sugar and garnish with fresh berries if desired.
  12. Serve chilled or at room temperature.
