Ingredients

  • Ground beef - 250 grams
  • Ground lamb - 250 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Harissa paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Natural casings - 2 meters (optional for casing)
  • Olive oil - 1 tablespoon (for grilling)

Steps

  1. In a large bowl, combine the ground beef, ground lamb, minced garlic, cumin, coriander, paprika, harissa paste, salt, black pepper, and chopped parsley. Mix well until all ingredients are fully incorporated.
  2. If using natural casings, rinse them thoroughly and soak in water for 30 minutes. Rinse again before using.
  3. Stuff the sausage mixture into the casings, twisting them into 10-15 cm links. If not using casings, shape the mixture into patties.
  4. Preheat the grill to medium-high heat and lightly brush with olive oil.
  5. Grill the sausages for about 10-12 minutes, turning occasionally, until they are browned and cooked through. If using patties, grill for about 5-7 minutes per side.
  6. Remove from the grill and let rest for a few minutes before serving.
