Merguez Sausages

Ingredients
- Ground beef - 250 grams
- Ground lamb - 250 grams
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Harissa paste - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Natural casings - 2 meters (optional for casing)
- Olive oil - 1 tablespoon (for grilling)
Steps
- In a large bowl, combine the ground beef, ground lamb, minced garlic, cumin, coriander, paprika, harissa paste, salt, black pepper, and chopped parsley. Mix well until all ingredients are fully incorporated.
- If using natural casings, rinse them thoroughly and soak in water for 30 minutes. Rinse again before using.
- Stuff the sausage mixture into the casings, twisting them into 10-15 cm links. If not using casings, shape the mixture into patties.
- Preheat the grill to medium-high heat and lightly brush with olive oil.
- Grill the sausages for about 10-12 minutes, turning occasionally, until they are browned and cooked through. If using patties, grill for about 5-7 minutes per side.
- Remove from the grill and let rest for a few minutes before serving.
