Ingredients
- Ground beef - 250 grams
- Ground lamb - 250 grams
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Harissa - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 1 tablespoon
- Natural sheep casings - 2 meters (optional, for casing)
Steps
- In a large bowl, combine the ground beef, ground lamb, minced garlic, cumin, coriander, paprika, harissa, salt, black pepper, and chopped parsley. Mix well until all ingredients are evenly incorporated.
- If using natural sheep casings, rinse them under cold water and soak in warm water for about 30 minutes. Prepare the sausage stuffer according to the manufacturer's instructions.
- Stuff the sausage mixture into the casings, being careful not to overfill. Twist sausages into 15 cm links and tie off the ends. If not using casings, shape the mixture into patties.
- Preheat your grill to medium-high heat and brush the grill grates with olive oil to prevent sticking.
- Grill the sausages for about 10-12 minutes, turning occasionally, until they are cooked through and have a nice char on the outside. If using patties, grill for about 6-7 minutes on each side.
- Remove from the grill and let rest for a few minutes before serving. Serve with pita bread, grilled vegetables, or a fresh salad.
