Merguez is a spicy North African sausage that is bursting with flavor, making it a perfect addition to any BBQ. This kosher version uses lamb and a blend of spices that will delight your taste buds.

Ingredients

  • Ground lamb - 300 grams
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Harissa paste - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 1 tablespoon
  • Natural casing for sausages - 1 meter (optional)

Steps

  1. In a large bowl, combine the ground lamb, minced garlic, cumin, coriander, paprika, harissa paste, salt, black pepper, and chopped parsley. Mix well until all ingredients are evenly incorporated.
  2. If using sausage casings, rinse them thoroughly and soak in water for about 30 minutes. If not using casings, form the mixture into patties.
  3. If using casings, stuff the mixture into the casings using a sausage stuffer, twisting them into 15 cm links. Tie the ends securely.
  4. Preheat your grill or barbecue to medium-high heat. Brush the grill with olive oil to prevent sticking.
  5. Grill the merguez sausages for about 10-12 minutes, turning occasionally, until they are cooked through and have a nice char on the outside.
  6. Remove from the grill and let rest for a few minutes before serving.
  7. Serve hot with pita bread, salad, or your favorite dipping sauce.
