Ingredients

  • white fish fillet (like cod) - 200 grams
  • shrimp, peeled and deveined - 100 grams
  • olive oil - 2 tablespoons
  • garlic, minced - 2 cloves
  • onion, finely chopped - 1 small
  • fennel bulb, chopped - 1/2
  • tomato paste - 1 tablespoon
  • saffron threads - a pinch
  • fresh parsley, chopped - 2 tablespoons
  • fresh thyme - 1 teaspoon
  • egg - 1 large
  • salt - to taste
  • pepper - to taste
  • mixed salad greens - 2 cups
  • lemon wedges - for serving

Steps

  1. In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic, chopped onion, and fennel. Sauté until soft, about 5 minutes.
  2. Add the tomato paste, saffron, parsley, thyme, salt, and pepper. Stir to combine and cook for another 2 minutes. Remove from heat and let cool.
  3. In a food processor, combine the white fish fillet and shrimp. Pulse until finely minced. Add the cooled vegetable mixture and the egg. Pulse again until just combined.
  4. Form the seafood mixture into two patties. Heat the remaining tablespoon of olive oil in the same pan over medium heat.
  5. Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through.
  6. Serve the patties on a bed of mixed salad greens, garnished with lemon wedges.
