Ingredients
- white fish fillet (like cod) - 200 grams
- shrimp, peeled and deveined - 100 grams
- olive oil - 2 tablespoons
- garlic, minced - 2 cloves
- onion, finely chopped - 1 small
- fennel bulb, chopped - 1/2
- tomato paste - 1 tablespoon
- saffron threads - a pinch
- fresh parsley, chopped - 2 tablespoons
- fresh thyme - 1 teaspoon
- egg - 1 large
- salt - to taste
- pepper - to taste
- mixed salad greens - 2 cups
- lemon wedges - for serving
Steps
- In a pan, heat 1 tablespoon of olive oil over medium heat. Add minced garlic, chopped onion, and fennel. Sauté until soft, about 5 minutes.
- Add the tomato paste, saffron, parsley, thyme, salt, and pepper. Stir to combine and cook for another 2 minutes. Remove from heat and let cool.
- In a food processor, combine the white fish fillet and shrimp. Pulse until finely minced. Add the cooled vegetable mixture and the egg. Pulse again until just combined.
- Form the seafood mixture into two patties. Heat the remaining tablespoon of olive oil in the same pan over medium heat.
- Cook the patties for 4-5 minutes on each side, or until golden brown and cooked through.
- Serve the patties on a bed of mixed salad greens, garnished with lemon wedges.
