Ingredients
- Duck breast - 2 pieces (about 300g each)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh thyme - 2 sprigs
- Garlic - 1 clove, minced
- Red wine vinegar - 2 tablespoons
- Chicken broth - 100 ml
- Butter - 30g
Steps
- Score the skin of the duck breasts in a diamond pattern, being careful not to cut into the meat.
- Season both sides of the duck breasts with salt and black pepper.
- In a cold, dry skillet, place the duck breasts skin-side down and turn the heat to medium. Cook for about 6-8 minutes until the skin is crispy and golden brown.
- Flip the duck breasts over and cook for an additional 4-5 minutes for medium-rare, or longer if preferred.
- Remove the duck breasts from the skillet and let them rest on a cutting board, tented with foil.
- Pour off excess fat from the skillet, leaving about 1 tablespoon. Add minced garlic and thyme, sautéing for 1 minute.
- Deglaze the skillet with red wine vinegar, scraping up any browned bits. Add chicken broth and reduce by half, about 3-4 minutes.
- Finish the sauce by whisking in the butter until melted and smooth.
- Slice the duck breast and serve with the sauce drizzled over the top.
