- almond milk - 50 milliliters
- coconut oil - 30 grams, melted
- vanilla extract - 1 teaspoon
- lemon zest - 1 teaspoon
- powdered sugar - for dusting (optional)
Steps
- Preheat your oven to 180°C (350°F) and grease a madeleine pan with a little coconut oil.
- In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate bowl, mix together the applesauce, almond milk, melted coconut oil, vanilla extract, and lemon zest until well combined.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
