  • unsweetened applesauce - 30 grams
  • almond milk - 50 milliliters
  • coconut oil - 30 grams, melted
  • vanilla extract - 1 teaspoon
  • lemon zest - 1 teaspoon
  • powdered sugar - for dusting (optional)

Steps

  1. Preheat your oven to 180°C (350°F) and grease a madeleine pan with a little coconut oil.
  2. In a mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In a separate bowl, mix together the applesauce, almond milk, melted coconut oil, vanilla extract, and lemon zest until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; do not overmix.
