Steps

  1. Preheat the oven to 180°C (350°F) and grease a madeleine pan with butter.
  2. In a mixing bowl, whisk together the almond flour, powdered sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and add the melted butter, vanilla extract, and lemon zest until well combined.
  4. Gradually fold the egg mixture into the dry ingredients until just combined; do not overmix.
  5. Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
  6. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
