Steps
- Preheat the oven to 180°C (350°F) and grease a madeleine pan with butter.
- In a mixing bowl, whisk together the almond flour, powdered sugar, baking powder, and salt.
- In another bowl, beat the eggs and add the melted butter, vanilla extract, and lemon zest until well combined.
- Gradually fold the egg mixture into the dry ingredients until just combined; do not overmix.
- Spoon the batter into the prepared madeleine pan, filling each mold about 3/4 full.
- Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers spring back when lightly touched.
