  • Almond flour - 100 grams
  • Powdered sugar - 50 grams
  • Eggs - 2 large
  • Unsalted butter - 50 grams, melted
  • Honey - 1 tablespoon
  • Vanilla extract - 1 teaspoon
  • Lemon zest - 1 teaspoon
  • Baking powder - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. Preheat the oven to 180°C (350°F) and grease a madeleine pan with butter.
  2. In a mixing bowl, whisk the eggs and powdered sugar together until pale and frothy.
  3. Add the melted butter, honey, vanilla extract, and lemon zest to the egg mixture, and whisk until well combined.
  4. In another bowl, mix the almond flour, baking powder, and salt together.
  5. Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
  6. Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers spring back when lightly touched.
  8. Remove from the oven and let the madeleines cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
