Steps
- Preheat the oven to 180°C (350°F) and grease a madeleine pan with butter.
- In a mixing bowl, whisk the eggs and powdered sugar together until pale and frothy.
- Add the melted butter, honey, vanilla extract, and lemon zest to the egg mixture, and whisk until well combined.
- In another bowl, mix the almond flour, baking powder, and salt together.
- Gradually fold the dry ingredients into the wet mixture until just combined, being careful not to overmix.
- Spoon the batter into the prepared madeleine pan, filling each mold about three-quarters full.
- Bake in the preheated oven for 10-12 minutes or until the edges are golden and the centers spring back when lightly touched.
