Macarons Végans

Ingredients

  • Almond flour - 100 grams
  • Powdered sugar - 70 grams
  • Aquafaba - 60 ml
  • Granulated sugar - 50 grams
  • Vanilla extract - 1 teaspoon
  • Cocoa powder - 10 grams (for chocolate macarons)
  • Coconut cream - 50 grams (for filling)
  • Dark chocolate (vegan) - 50 grams (for filling)

Steps

  1. Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour, powdered sugar, and cocoa powder (if using). Set aside.
  3. In a separate bowl, whip the aquafaba until soft peaks form, then gradually add the granulated sugar while continuing to whip until stiff peaks form.
  4. Gently fold the dry ingredients into the aquafaba mixture, being careful not to deflate the meringue. The mixture should be glossy and flow slowly when lifted.
  5. Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheet, leaving space between each macaron.
  6. Tap the baking sheet on the counter to remove any air bubbles and let the macarons sit for about 30 minutes until a skin forms.
  7. Bake the macarons for 15-18 minutes, then allow them to cool completely on the baking sheet.
  8. While the macarons cool, prepare the filling by melting the dark chocolate and mixing it with the coconut cream until smooth.
  9. Once the macarons are cool, pair them up and pipe a small amount of the chocolate filling onto one macaron of each pair, then sandwich with the other macaron.
  10. Let the filled macarons set in the refrigerator for at least 30 minutes before serving.
