Macarons Végans

Ingredients
- Almond flour - 100 grams
- Powdered sugar - 70 grams
- Aquafaba - 60 ml
- Granulated sugar - 50 grams
- Vanilla extract - 1 teaspoon
- Cocoa powder - 10 grams (for chocolate macarons)
- Coconut cream - 50 grams (for filling)
- Dark chocolate (vegan) - 50 grams (for filling)
Steps
- Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
- In a bowl, sift together the almond flour, powdered sugar, and cocoa powder (if using). Set aside.
- In a separate bowl, whip the aquafaba until soft peaks form, then gradually add the granulated sugar while continuing to whip until stiff peaks form.
- Gently fold the dry ingredients into the aquafaba mixture, being careful not to deflate the meringue. The mixture should be glossy and flow slowly when lifted.
- Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheet, leaving space between each macaron.
- Tap the baking sheet on the counter to remove any air bubbles and let the macarons sit for about 30 minutes until a skin forms.
- Bake the macarons for 15-18 minutes, then allow them to cool completely on the baking sheet.
- While the macarons cool, prepare the filling by melting the dark chocolate and mixing it with the coconut cream until smooth.
- Once the macarons are cool, pair them up and pipe a small amount of the chocolate filling onto one macaron of each pair, then sandwich with the other macaron.
- Let the filled macarons set in the refrigerator for at least 30 minutes before serving.
