Ingredients

  • Almond flour - 50g
  • Powdered erythritol - 40g
  • Egg whites - 2 large (about 60g)
  • Raspberry puree - 30g
  • Butter - 30g
  • Heavy cream - 30g
  • Vanilla extract - 1/2 teaspoon
  • Salt - a pinch
  • Fresh raspberries - for garnish

Steps

  1. Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. In a bowl, sift together the almond flour and powdered erythritol to remove any lumps.
  3. In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form.
  4. Gradually add the powdered erythritol while continuing to beat until stiff peaks form and the mixture is glossy.
  5. Gently fold the almond flour mixture into the meringue, being careful not to deflate the egg whites.
  6. Transfer the macaron batter to a piping bag and pipe small circles (about 3 cm in diameter) onto the prepared baking sheet.
  7. Let the macarons sit at room temperature for 20-30 minutes until a skin forms on the surface.
  8. Bake in the preheated oven for 15-18 minutes, until the macarons are firm and can be lifted off the parchment easily.
  9. While the macarons cool, prepare the filling by beating the butter until creamy, then add the heavy cream, raspberry puree, vanilla extract, and mix until smooth.
  10. Once the macarons are cool, match them in pairs and spread or pipe the raspberry filling on one macaron of each pair, then sandwich with the other macaron.
  11. Garnish with fresh raspberries if desired and serve immediately.
