- Powdered erythritol - 40g
- Egg whites - 2 large (about 60g)
- Raspberry puree - 30g
- Butter - 30g
- Heavy cream - 30g
- Vanilla extract - 1/2 teaspoon
- Salt - a pinch
- Fresh raspberries - for garnish
Steps
- Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
- In a bowl, sift together the almond flour and powdered erythritol to remove any lumps.
- In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form.
- Gradually add the powdered erythritol while continuing to beat until stiff peaks form and the mixture is glossy.
- Gently fold the almond flour mixture into the meringue, being careful not to deflate the egg whites.
- Transfer the macaron batter to a piping bag and pipe small circles (about 3 cm in diameter) onto the prepared baking sheet.
- Let the macarons sit at room temperature for 20-30 minutes until a skin forms on the surface.
- Bake in the preheated oven for 15-18 minutes, until the macarons are firm and can be lifted off the parchment easily.
- While the macarons cool, prepare the filling by beating the butter until creamy, then add the heavy cream, raspberry puree, vanilla extract, and mix until smooth.
- Once the macarons are cool, match them in pairs and spread or pipe the raspberry filling on one macaron of each pair, then sandwich with the other macaron.
- Garnish with fresh raspberries if desired and serve immediately.
