Steps
- Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, erythritol, and a pinch of salt. Sift the mixture to ensure there are no lumps.
- In a separate clean bowl, whisk the egg whites until they form soft peaks. Gradually add the remaining erythritol while continuing to whisk until stiff peaks form.
- Gently fold the almond flour mixture into the egg whites until fully combined and the batter flows smoothly.
- Transfer the mixture to a piping bag and pipe small circles (about 3 cm in diameter) onto the prepared baking sheet, leaving space between each macaron.
- Let the macarons sit at room temperature for 30 minutes until a skin forms on the surface.
- Bake in the preheated oven for about 15-18 minutes, or until the macarons have risen and the tops are set.
- While the macarons cool, prepare the ganache by combining coconut cream, powdered erythritol, and vanilla extract in a small saucepan over low heat. Stir until smooth and let cool.
- Once the macarons are cool, pair them up and spread or pipe the ganache on the flat side of one macaron, then top with its pair.
- Serve immediately or refrigerate for later enjoyment.
