  • Coconut cream - 50g
  • Vanilla extract - 1 tsp
  • Pinch of salt - 1

Steps

  1. Preheat your oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine almond flour, erythritol, and a pinch of salt. Sift the mixture to ensure there are no lumps.
  3. In a separate clean bowl, whisk the egg whites until they form soft peaks. Gradually add the remaining erythritol while continuing to whisk until stiff peaks form.
  4. Gently fold the almond flour mixture into the egg whites until fully combined and the batter flows smoothly.
  5. Transfer the mixture to a piping bag and pipe small circles (about 3 cm in diameter) onto the prepared baking sheet, leaving space between each macaron.
  6. Let the macarons sit at room temperature for 30 minutes until a skin forms on the surface.
  7. Bake in the preheated oven for about 15-18 minutes, or until the macarons have risen and the tops are set.
  8. While the macarons cool, prepare the ganache by combining coconut cream, powdered erythritol, and vanilla extract in a small saucepan over low heat. Stir until smooth and let cool.
  9. Once the macarons are cool, pair them up and spread or pipe the ganache on the flat side of one macaron, then top with its pair.
  10. Serve immediately or refrigerate for later enjoyment.
