- Greek yogurt - 60 grams
- Honey - 1 teaspoon
- Lemon zest - 1 teaspoon
Steps
- Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the almond flour and powdered erythritol until well combined.
- In a separate bowl, beat the egg whites and salt until stiff peaks form.
- Gently fold the almond flour mixture into the whipped egg whites, incorporating the vanilla extract until just combined.
- Transfer the mixture to a piping bag and pipe small circles onto the prepared baking sheet.
- Let the macarons sit at room temperature for 20-30 minutes or until a skin forms on the surface.
- Bake in the preheated oven for 15-20 minutes until the edges are firm but the centers are still soft.
- While the macarons cool, prepare the filling by mixing Greek yogurt, honey, and lemon zest in a bowl.
- Once the macarons have cooled completely, pair them up and spread a dollop of the yogurt filling on the flat side of one macaron, then sandwich with the other macaron.
