Ingredients
- Almond flour - 90 grams
- Confectioners' sugar - 90 grams
- Egg whites - 60 grams (approximately 2 large eggs)
- Granulated sugar - 30 grams
- Vanilla extract - 1 teaspoon
- Food coloring - optional (1-2 drops)
- Butter - 50 grams (for filling)
- Powdered sugar - 100 grams (for filling)
- Milk - 2 tablespoons (for filling)
Steps
- Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
- In a bowl, sift together the almond flour and confectioners' sugar to remove any lumps.
- In a separate bowl, beat the egg whites until they become foamy, then gradually add the granulated sugar while continuing to beat until stiff peaks form.
- Add the vanilla extract and food coloring (if using) to the meringue and gently fold until well combined.
- Carefully fold the almond flour mixture into the meringue in three additions until the batter is smooth and flows like lava.
- Transfer the batter to a piping bag fitted with a round tip and pipe small circles (about 3 cm in diameter) onto the prepared baking sheets.
- Tap the baking sheets on the counter to release air bubbles and let the macarons sit for 30 minutes to form a skin.
- Bake in the preheated oven for 15-20 minutes until the macarons have risen and have a slight sheen. Let them cool completely on the baking sheets.
- For the filling, beat the softened butter and powdered sugar together in a bowl until light and fluffy, then add the milk and mix until smooth.
- Once the macarons are cooled, pair them up and pipe a small amount of filling on the flat side of one macaron, then sandwich it with the other.
- Let the assembled macarons rest for at least 30 minutes before serving to enhance their flavor.
