- Lentilles vertes du Puy - 200 grams
- Carrot - 1 medium, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Olive oil - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the lentilles vertes du Puy under cold water and set aside.
- In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and continue to sauté for another 1-2 minutes until fragrant.
- Stir in the rinsed lentils, vegetable broth, bay leaf, and thyme. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and simmer for 25-30 minutes or until the lentils are tender but still hold their shape.
- Remove the bay leaf, season with salt and pepper to taste, and serve warm, garnished with fresh parsley.
