Ingredients

  • Lentilles vertes du Puy - 200 grams
  • Carrot - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentilles vertes du Puy under cold water and set aside.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  3. Add the minced garlic and continue to sauté for another 1-2 minutes until fragrant.
  4. Stir in the rinsed lentils, vegetable broth, bay leaf, and thyme. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 25-30 minutes or until the lentils are tender but still hold their shape.
  6. Remove the bay leaf, season with salt and pepper to taste, and serve warm, garnished with fresh parsley.
