Ingredients

  • Green lentils - 150 grams
  • Carrot - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Celery - 1 stalk, diced
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Vegetable broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the green lentils under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat and sauté the chopped onion, carrot, garlic, and celery until softened, about 5-7 minutes.
  3. Add the rinsed lentils, bay leaf, thyme, and vegetable broth to the pot. Bring to a boil.
  4. Once boiling, reduce the heat to low and cover the pot. Simmer for about 25-30 minutes, or until the lentils are tender but not mushy.
  5. Season with salt and black pepper to taste. Remove the bay leaf before serving.
