- Green lentils - 150 grams
- Carrot - 1 medium, diced

- Garlic - 2 cloves, minced
- Celery - 1 stalk, diced
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the green lentils under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat and sauté the chopped onion, carrot, garlic, and celery until softened, about 5-7 minutes.
- Add the rinsed lentils, bay leaf, thyme, and vegetable broth to the pot. Bring to a boil.
- Once boiling, reduce the heat to low and cover the pot. Simmer for about 25-30 minutes, or until the lentils are tender but not mushy.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
