Ingredients

  • Rabbit leg - 400 grams
  • Dijon mustard - 2 tablespoons
  • Heavy cream - 100 ml
  • Chicken broth - 200 ml
  • Garlic - 2 cloves, minced
  • Shallots - 2, finely chopped
  • Thyme - 1 teaspoon, dried
  • Olive oil - 2 tablespoons
  • Black pepper - to taste
  • Salt - to taste
  • Fresh parsley - for garnish

Steps

  1. In a bowl, mix the Dijon mustard with salt and black pepper. Rub this mixture all over the rabbit legs and let them marinate for at least 30 minutes.
  2. Heat the olive oil in a large skillet over medium heat. Add the rabbit legs and sear them until golden brown on all sides, about 5-7 minutes.
  3. Remove the rabbit from the skillet and set aside. In the same skillet, add the minced garlic and chopped shallots, sautéing until softened, about 3-4 minutes.
  4. Return the rabbit legs to the skillet, then pour in the chicken broth and sprinkle with dried thyme. Bring to a simmer.
  5. Cover the skillet and let it cook on low heat for about 30 minutes, or until the rabbit is tender.
  6. Remove the rabbit once again, and stir in the heavy cream. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
  7. Return the rabbit to the skillet, spooning the sauce over it. Cook for an additional 2-3 minutes to heat through.
  8. Serve the rabbit hot, garnished with fresh parsley.
