- Rabbit leg - 400 grams
- Dijon mustard - 2 tablespoons
- Heavy cream - 100 ml
- Chicken broth - 200 ml
- Garlic - 2 cloves, minced
- Shallots - 2, finely chopped
- Thyme - 1 teaspoon, dried
- Olive oil - 2 tablespoons
- Black pepper - to taste
- Salt - to taste
- Fresh parsley - for garnish
Steps
- In a bowl, mix the Dijon mustard with salt and black pepper. Rub this mixture all over the rabbit legs and let them marinate for at least 30 minutes.
- Heat the olive oil in a large skillet over medium heat. Add the rabbit legs and sear them until golden brown on all sides, about 5-7 minutes.
- Remove the rabbit from the skillet and set aside. In the same skillet, add the minced garlic and chopped shallots, sautéing until softened, about 3-4 minutes.
- Return the rabbit legs to the skillet, then pour in the chicken broth and sprinkle with dried thyme. Bring to a simmer.
- Cover the skillet and let it cook on low heat for about 30 minutes, or until the rabbit is tender.
- Remove the rabbit once again, and stir in the heavy cream. Cook for an additional 5 minutes, allowing the sauce to thicken slightly.
- Return the rabbit to the skillet, spooning the sauce over it. Cook for an additional 2-3 minutes to heat through.
- Serve the rabbit hot, garnished with fresh parsley.
