  • Fresh Thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black Pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the carrots, then cut them into uniform sticks.
  3. Slice the zucchini and red bell pepper into bite-sized pieces.
  4. Peel the red onion and cut it into wedges.
  5. Mince the garlic cloves.
  6. In a large bowl, combine the carrots, zucchini, red bell pepper, red onion, and minced garlic.
  7. Drizzle the olive oil over the vegetables and sprinkle with fresh thyme, salt, and black pepper.
  8. Toss the vegetables until they are evenly coated with the oil and seasonings.
  9. Spread the vegetable mixture evenly on a baking sheet lined with parchment paper.
  10. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
