Steps
- Preheat the oven to 200°C (400°F).
- Wash and peel the carrots, then cut them into uniform sticks.
- Slice the zucchini and red bell pepper into bite-sized pieces.
- Peel the red onion and cut it into wedges.
- Mince the garlic cloves.
- In a large bowl, combine the carrots, zucchini, red bell pepper, red onion, and minced garlic.
- Drizzle the olive oil over the vegetables and sprinkle with fresh thyme, salt, and black pepper.
- Toss the vegetables until they are evenly coated with the oil and seasonings.
