Ingredients

  • Zucchini - 200 grams
  • Eggplant - 150 grams
  • Red bell pepper - 100 grams
  • Yellow bell pepper - 100 grams
  • Cherry tomatoes - 150 grams
  • Red onion - 100 grams
  • Garlic - 2 cloves
  • Olive oil - 3 tablespoons
  • Fresh thyme - 1 teaspoon
  • Fresh rosemary - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Wash and chop the zucchini, eggplant, red and yellow bell peppers, and red onion into bite-sized pieces.
  3. In a large mixing bowl, combine the chopped vegetables with cherry tomatoes, minced garlic, olive oil, fresh thyme, fresh rosemary, salt, and black pepper.
  4. Toss the vegetables until they are evenly coated with the oil and herbs.
  5. Transfer the vegetable mixture onto a grill basket or skewers.
  6. Grill the vegetables for about 15-20 minutes, turning occasionally, until they are tender and slightly charred.
  7. Once cooked, remove the vegetables from the grill and let them rest for a few minutes before serving.
