- Zucchini - 200 grams
- Eggplant - 150 grams
- Red bell pepper - 100 grams
- Yellow bell pepper - 100 grams
- Cherry tomatoes - 150 grams
- Red onion - 100 grams
- Garlic - 2 cloves
- Olive oil - 3 tablespoons
- Fresh thyme - 1 teaspoon
- Fresh rosemary - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your grill or BBQ to medium-high heat.
- Wash and chop the zucchini, eggplant, red and yellow bell peppers, and red onion into bite-sized pieces.
- In a large mixing bowl, combine the chopped vegetables with cherry tomatoes, minced garlic, olive oil, fresh thyme, fresh rosemary, salt, and black pepper.
- Toss the vegetables until they are evenly coated with the oil and herbs.
- Transfer the vegetable mixture onto a grill basket or skewers.
- Grill the vegetables for about 15-20 minutes, turning occasionally, until they are tender and slightly charred.
