- Eggplant - 1 small (about 200g)
- Cherry tomatoes - 200g
- Olive oil - 2 tablespoons (30ml)
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the grill to medium-high heat.
- Wash and slice the zucchini, red bell pepper, yellow bell pepper, and eggplant into 1 cm thick slices.
- In a large mixing bowl, combine the sliced vegetables with cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with chopped thyme, rosemary, salt, and black pepper. Toss to coat evenly.
- Place the vegetables on the grill, ensuring they are arranged in a single layer.
- Grill the vegetables for approximately 5-7 minutes on each side, or until they are tender and have nice grill marks.
- Remove the vegetables from the grill and let them rest for a few minutes before serving.
