Ingredients

  • Red bell pepper - 1 medium (about 150g)
  • Yellow bell pepper - 1 medium (about 150g)
  • Eggplant - 1 small (about 200g)
  • Cherry tomatoes - 200g
  • Olive oil - 2 tablespoons (30ml)
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and slice the zucchini, red bell pepper, yellow bell pepper, and eggplant into 1 cm thick slices.
  3. In a large mixing bowl, combine the sliced vegetables with cherry tomatoes.
  4. Drizzle the olive oil over the vegetables and sprinkle with chopped thyme, rosemary, salt, and black pepper. Toss to coat evenly.
  5. Place the vegetables on the grill, ensuring they are arranged in a single layer.
  6. Grill the vegetables for approximately 5-7 minutes on each side, or until they are tender and have nice grill marks.
  7. Remove the vegetables from the grill and let them rest for a few minutes before serving.
