  • Cherry tomatoes - 100 grams
  • Red onion - 100 grams
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon
  • Garlic (minced) - 1 clove
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Balsamic vinegar - 1 tablespoon

Steps

  1. Preheat the BBQ grill to medium-high heat.
  2. Wash and slice the zucchini, bell pepper, and eggplant into 1 cm thick slices.
  3. Halve the cherry tomatoes and cut the red onion into wedges.
  4. In a large bowl, combine the sliced vegetables with olive oil, minced garlic, fresh thyme, salt, and black pepper. Toss to coat evenly.
