Kouign-Amann

Kouign-Amann is a decadent Breton pastry known for its flaky layers and caramelized sugar crust. This Halal version maintains its authenticity while ensuring it's suitable for all dietary preferences.

Ingredients

  • all-purpose flour - 200 grams
  • unsalted butter (Halal) - 150 grams, cold
  • water - 100 ml, cold
  • granulated sugar - 100 grams
  • active dry yeast - 5 grams
  • salt - 5 grams

Steps

  1. In a bowl, mix the flour, salt, and yeast together.
  2. Add cold water gradually while mixing until a dough forms. Knead for about 5 minutes until smooth.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  4. On a lightly floured surface, roll out the dough into a rectangle.
  5. Slice the cold butter into thin slices and place them on the lower two-thirds of the rectangle.
  6. Fold the top third of the dough over the butter, then fold the bottom third up over that to create a packet.
  7. Roll out the packet gently to about 1 cm thickness, then fold it in thirds again.
  8. Wrap the dough in plastic wrap and refrigerate for another 30 minutes.
  9. Repeat the rolling and folding process two more times, refrigerating for 30 minutes between each fold.
  10. Preheat your oven to 200°C (390°F).
  11. Roll the dough one last time into a rectangle, sprinkle with half of the sugar, then fold it in thirds again.
  12. Place the folded dough in a greased round baking dish and sprinkle the remaining sugar on top.
  13. Bake in the preheated oven for 40-45 minutes until golden brown and caramelized.
  14. Let cool for 10 minutes before serving.
