Ingredients

  • Almond flour - 150 grams
  • Grated mozzarella cheese - 100 grams
  • Cream cheese - 50 grams
  • Egg - 1 large
  • Salt - 1/2 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Bacon - 100 grams, chopped
  • Onion - 1 medium, thinly sliced
  • Heavy cream - 50 ml
  • Black pepper - to taste
  • Chives - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a mixing bowl, combine almond flour, grated mozzarella, cream cheese, egg, salt, and baking powder. Mix until a dough forms.
  3. Place the dough between two sheets of parchment paper and roll it out into a thin rectangle, approximately 0.5 cm thick.
  4. Transfer the rolled dough to a baking sheet lined with parchment paper.
  5. In a skillet, heat olive oil over medium heat. Add chopped bacon and cook until crispy. Remove from skillet and set aside.
  6. In the same skillet, add sliced onions and sauté until they are caramelized and translucent, about 5-7 minutes.
  7. Spread the heavy cream over the dough, leaving a small border around the edges.
  8. Evenly distribute the caramelized onions and crispy bacon over the cream layer. Season with black pepper.
  9. Bake in the preheated oven for 15-20 minutes, or until the edges are golden and the cheese is bubbly.
  10. Remove from the oven and let it cool slightly. Garnish with chopped chives before slicing and serving.
