Ingredients

  • Yellow onions - 2 medium (300g)
  • Butter - 30g
  • Garlic - 2 cloves, minced
  • Beef broth - 500ml
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Heavy cream - 100ml
  • Gruyère cheese, shredded - 100g
  • Fresh parsley, chopped - 1 tablespoon (for garnish)

Steps

  1. Slice the onions thinly and set aside.
  2. In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they become soft and caramelized, about 25-30 minutes, stirring occasionally.
  3. Add minced garlic to the pot and cook for an additional 1-2 minutes until fragrant.
  4. Pour in the beef broth and add thyme, salt, and black pepper. Bring to a simmer and let cook for 10 minutes.
  5. Stir in the heavy cream and simmer for another 5 minutes to combine flavors.
  6. Preheat the oven to 200°C (400°F).
  7. Ladle the soup into oven-safe bowls, top with shredded Gruyère cheese, and place them on a baking tray.
  8. Bake in the preheated oven for 5-7 minutes until the cheese is bubbly and golden.
