Ingredients

  • Mixed greens - 100g
  • Cherry tomatoes - 100g
  • Cucumber - 100g
  • Radishes - 50g
  • Green beans - 100g
  • Canned tuna in olive oil - 150g
  • Hard-boiled eggs - 2 large
  • Black olives - 50g
  • Extra virgin olive oil - 3 tablespoons
  • Red wine vinegar - 1 tablespoon
  • Dijon mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh basil - a handful

Steps

  1. Begin by boiling water in a pot and blanch the green beans for about 3-4 minutes until tender but crisp. Drain and cool them in ice water to stop the cooking process.
  2. While the green beans are cooling, prepare the hard-boiled eggs. Place them in a pot, cover with water, bring to a boil, then cover and remove from heat for 10-12 minutes. After cooking, transfer to cold water, peel, and cut into quarters.
  3. In a large bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, and sliced radishes.
  4. Add the cooled green beans and canned tuna to the bowl, breaking the tuna into chunks.
  5. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, Dijon mustard, salt, and black pepper to create the vinaigrette.
  6. Drizzle the vinaigrette over the salad and toss gently to combine all ingredients.
  7. Top the salad with the quartered hard-boiled eggs, black olives, and fresh basil leaves.
